Hibiscus

The hibiscus we use is roselle, a tropical plant whose fleshy, deep red calyces give a vibrant colour and a tart, cranberry-like taste. The calyx is the cup of sepals that surrounds the flower.

History and tradition
Hibiscus is loved as a drink in many cultures. In Egypt and Sudan, it is brewed as karkadé. In Mexico, it is served chilled as agua de jamaica.
In the Caribbean, where it is called sorrel, hibiscus is simmered with spices such as ginger and cinnamon into a festive Christmas drink.
Its deep colour and refreshing sourness have made it a popular ingredient in herbal teas around the world.
