History and tradition
Ginger has been used in Asia for thousands of years and holds an important place in both Ayurvedic and traditional Chinese practice, where it is valued as a "warming" herb.
It reached Europe along the ancient spice routes and became one of the most prized spices in medieval Britain. By Tudor times, ginger was a familiar flavour in everything from gingerbread to spiced drinks.
Today, ginger remains a staple of winter kitchens: fresh ginger tea with honey and lemon, mulled drinks and spiced syrups.
